Garlic is one of the oldest cultivated plants, dating back over 5,000 years. Common varieties include white garlic, pink garlic (only the outer skin is colored), and rocambole garlic, which has a milder flavor. Choose plump, firm bulbs, free of sprouts and blemishes, and with the skin intact. Remove the green germ, which is sometimes found in the center of the clove, as it makes the garlic indigestible and is responsible for the odor it leaves on the breath. Garlic flavors a wide variety of dishes, including aioli, rouille, tapenade, pesto, and garlic butter; meats, such as leg of lamb, can be studded with garlic.
