These star anise plants grow semi-wild in northeastern Vietnam. Highly fragrant, they are used in small doses in both savory dishes and desserts.

Although it contains essential oils similar to anise seed, star anise is much more intense. Its sweet, licorice flavor is more pronounced, so it is used in small quantities. In Vietnamese and Chinese cuisine, it flavors braised meat dishes and broths. It is also found in Chinese five-spice powder. It pairs particularly well with pork, beef, and duck. With a little tangerine peel and fennel, it adds a wonderful flavor to roast or pork chops.
