Asafoetida is a dried resin extracted from the rhizomes of two species of giant fennel that grow in India and Iran. Used to flavor vegetables, fish, and Indian sauces, it has a repulsive odor that disappears when cooked. The ancient Romans used it medicinally; in India, it is still prescribed to relieve flatulence and treat bronchitis. It can be found in Indian markets.
