Originating from Ethiopia, this blend can be considered a very aromatic paprika. It is composed of a base of three chilies, to which two varieties of cardamom, ginger, fenugreek, allspice, and pepper are added, among other things. Berbere enhances meats well, and is particularly good with roasted chicken, mixed with a little crushed garlic and oil. It also works wonders with stews, casseroles, and meat dishes.
