THE CUSTOM CHEF™ Cuisine::pro® iD3® knives are crafted from the finest 420J2 Japanese steel. The Japanese steel blade construction was inspired by centuries-old manufacturing techniques favored by traditional Japanese artisans and samurai sword makers, creating a super-sharp edge that maintains greater edge retention. The blades are ice-hardened, ensuring superior strength and durability.
Japanese iD3® steel has been mined in the same Japanese region of Chuo-Ku Chiba since the middle of the last century. Every knife in the iD3® range has been designed and tested to meet Rockwell 53 specifications, ensuring blade hardness and optimal performance.
