Cardamom has a delicate peppery flavor. Depending on whether it has been sun-dried, oven-dried, or blanched, the cardamom pod is green, brown, or white. In the West (particularly Scandinavia), this spice flavors cakes, biscuits, fruit compotes, marinades, charcuterie, wines, and liqueurs. In the East, it flavors meats, fish, rice, omelets, and desserts. It is one of the main ingredients in Indian curry and one of the spices in garam masala. Cardamom also flavors coffee in Arabia.
