Green cardamom is a wonderfully aromatic spice with a camphoric, lemony, and refreshing scent. In India, where it is considered a king of spices, it enhances many curries, rice dishes, and desserts. In Northern Europe, it gives traditional pastries a unique taste, while in the Middle East, it is most often used to flavor coffee. In some recipes, the whole pod can be used by lightly crushing it with a knife. It can also be ground whole, as the green husk also contains volatile oils.
