Details
A rigid knife, ideal for filleting medium-sized fish, such as trout and salmon. A must-have for restaurants, hotels, and caterers that serve fish and seafood. The blade is extremely hard (54-56 HRC) and has excellent cutting power. Easy to sharpen, but the blade does not chip.
The ergonomic handle is soft enough to be comfortable and reduce user fatigue, but coarse enough to prevent the knife from slipping. The green handle makes the knife visible on the work surface, alerting staff to its presence. It is also non-toxic and complies with European standards.
