The potassium salt of tartaric acid is used to stabilize egg whites in baking. Use to make candies, meringues, angel food cakes, frostings, and chiffon cakes. To make baking powder, combine 2 parts each: cream of tartar and cornstarch and 1 part sodium bicarbonate.
