I put a lot of love, energy and, as you will see, a lot of vegetables into this book! Obviously, I'm keeping the same formula, in line with the previous volumes, that is to say, I always add a gourmet touch to my dishes to create a beautiful balance between freshness and chic meals.
In spring, we naturally think of certain seasonal vegetables, like asparagus or peas, but I tried to explore several avenues by focusing on unusual techniques. I'm thinking, among others, of the miso-braised radishes on page 164, which are pleasantly surprising! I also developed recipes with in mind the events that take place during this season: Easter, Mother's Day, maple syrup season... Since the book is coming out just before the official date of the spring equinox, I even included ideas for Valentine's Day!
