Brining, especially poultry, makes the meat tender and juicy, as well as flavorful. This works well with poultry like turkey, which tends to dry out during cooking. (See technique below.)

Ingredients: mustard, coriander, fennel, juniper, licorice, star anise, cardamom, cloves, mandarin, pepper, thyme, cinnamon, bay leaf, chili, bangle, ginger, allspice.
