It's all Pagnol's accent, the southern sun, and the aniseed flavor of fish that we imagine as soon as its scent teases our nostrils. Fennel is eaten regularly and in large quantities with fish and green (hard) fruits to aid digestion. It is reported that in the 11th century, an average family could consume eight to nine pounds per month. Bitter fennel has a slightly aniseed taste. Sweet fennel has a fresh, slightly syrupy flavor that goes well with vinegars, condiments, fish, cream, sour cream, and court-bouillons. The seeds are used in the preparation of breads and stuffings; they flavor sausages and cabbage; it is even said that they do not disdain a little outing with apples.
