Used like nutmeg. Vanilla and almond flavor that pairs well with desserts, especially those with maple. Tonka bean is the kernel of a fruit from the West Indies and Central America, whose flavor evokes almonds and vanilla. It is used grated in all kinds of desserts, sometimes even as a substitute for vanilla, although the result is very different. It also lends itself well to crème brûlée, pastry cream, caramel, etc. Like nutmeg, tonka can be toxic if consumed in large quantities, but remains safe if used in reasonable quantities. Grate a little into your pancake mixes, on your French toast, or on pan-fried scallops.
