Arguably one of the most widely used spices in the world, ginger flavors desserts, Indian curries, and Chinese stir-fries alike. The aroma of dried ginger differs from that of fresh ginger, and Indians even give the two spices different names. Ginger from Cochin, India, has a rich aroma and is much less pungent than Chinese ginger.
