Also called "Guinea sorrel"), native to West Africa, produces shoots and young leaves that are eaten raw or cooked like vegetables. Its red flowers, dried and then infused, are used for sauces and jams or for the preparation of bissap, an infusion and syrup producing a red drink, drunk fresh and very sweet (sometimes prepared with mint) in West Africa, particularly in Senegal and Mauritania where one of its popular names in vogue has become "coc'Afrique" ("seille" in Guinea, "roselle" in Jamaica or "agua de Jamaica" in Mexico). It is a drink rich in ascorbic acid (hence its tangy taste) and is said to have diuretic properties.
