Various seven-spice mixtures are found in the Middle East, sometimes also called baharat , which vary from one region to another. Inspired by a centuries-old recipe from the Aleppo souk, this version is one of the essentials of Syrian cuisine.

Seven-spice, also known as Aleppo pepper, is an ancient blend used primarily with meat and poultry. It can be used as a marinade or as a finishing touch, much like freshly ground pepper. It is also composed of black pepper as well as aromatic spices such as cardamom, cinnamon, and a hint of galangal. A little spicy, but above all very fragrant, Aleppo seven-spice can also be used in rice or legume dishes. It is also very good in recipes based on nuts and dried fruits.
