Make delicious homemade ravioli.
Makes 10-2"/4.5 cm squares.
1. Place a strip of dough on the frame.
2. Press the dough into the frame with the serrated plate.
3. Fill the bags with the desired filling. Place a second strip of dough over the filling strip and press the strips together with your fingers.
4. Seal by rolling a rolling pin over the top. Roll over the pastry-covered frame, gently at first, then increase the pressure until the zigzag edges of the frame are visible through the pastry.
5. Remove the ravioli from the frame by tapping it on the counter.
6. Cut out the squares using a ravioli wheel or a knife.
7. Remove the excess dough and reroll. Repeat the procedure until all the dough and filling are used.
8. Place the ravioli on a heavily floured baking sheet and let dry for 1 hour. Turn over and let dry for another hour.
9. Cook the ravioli for 8 minutes or until tender (cooking time will vary depending on the thickness of the pasta). Drain. Serve with tomato, marinara sauce, or sage butter sauce, depending on your filling.
