Nigella offers us its small, aromatic, intensely black seeds. It has often been confused with onion seeds (Allium cepa, Alliaceae) and those of true black cumin (Cuminum sp., Apiaceae). Currently, nigellas are most often used in Europe as ornamental plants for their flowers. Nevertheless, thanks to their lemony and slightly spicy aroma, they remain present in many cuisines, such as in India where they enhance traditional breads, naans, as well as salads, rice, fish, etc. They are also used in the composition of Panch phoron, the 5 Bengali spices: a mixture of equal quantities of cumin, fennel, mustard, fenugreek, and nigella.
