Hungarians are considered specialists in paprika, whether mild or hot. They use it wonderfully to season their four national dishes: gulyas (goulash), which is more soup than meat stew, simmered with small pieces of beef, pork, or veal; pörkölt, a type of stew made with various kinds of meat (game, poultry, mutton, etc.), where the pieces are larger than in goulash; tokány, a stew of thinly sliced beef, the sauce of which is often topped with fresh or sour cream; and finally, paprikache, the tastiest of the typical Hungarian dishes, made with white meat or fish.
