Named after the city of Aleppo in Syria, this chili pepper flavors and enhances traditional Middle Eastern dishes. It has a rich, fruity aroma and is quite hot, although not as hot as cayenne. Also known as kirmizi biber, it ranks 5/10 on the Scoville scale. It is delicious in marinades for meat and fish, on potatoes, or simply to enhance steamed vegetables. You can also leave some on the table for serving, allowing everyone to adjust the amount to their own taste.
