It grows on the edge of a deep, narrow gorge in the Sichuan province, on soil irrigated by glacial water flowing down from the Tibetan plateau. This gives it unparalleled potency and aroma, and a single grain is enough to numb the entire tongue. For true connoisseurs, use by the pinch! In Szechuan cuisine, it is generally used with very hot chilies.
