Pepper comes from a climbing vine that grows mainly in Asia. The fruit, depending on the ripeness at which it is harvested and the processing method, will become green, black, or white pepper. Black pepper is harvested before maturity and then dried in the sun. As it dries, the rind takes on its black color and develops its full aroma. Sri Lankan black pepper, very hot, has a classic aroma with woody notes. It is an excellent pepper for the mill, and can be used for cooking as well as serving.
