Most people believe that black pepper is the mature fruit of the pepper plant. This is not the case. These peppercorns all come from berries that have reached their full size but are not quite ripe. These berries are therefore hand-picked and then dried in the sun without the use of electric dehydrators. Furthermore, it is the enzymes contained in the berries that cause the skin to blacken during the drying process. The later the berries are harvested, the better their aroma will be, as it will become more pungent and bitter.
