Savory is a condiment and medicinal herb whose leaves are mainly used, but also, sometimes, the flowering tops. In Provençal, it is called pebre d'aï or lou pebre d'ase, or 'donkey pepper', in reference to its aromatic and spicy flavor, and to the fact that it is found spontaneously on the limestone hillsides of southern France. Its scientific name satureia means 'belonging to satyrs', in reference to a reputation as an aphrodisiac... It goes well with grilled meats, cereals, and legumes, sautéed potatoes, and is also found in salami and certain sauces.
