Uses
Ideal for deglazing a pan and enhancing a sauce. A few drops will enhance your soups and make your pumpkin or zucchini cream absolutely delicious. Blends wonderfully with our orange olive oil.
Distinctive elements
A remarkable blend of grape must, tawny port, and cabernet sauvignon vinegars aged for 4 years in French oak barrels. This vinegar is made using a process invented in 1823 by German chemist Schützenbach. Unlike most industrially produced vinegars, this vinegar is the result of a slow fermentation process. Ten times slower than usual industrial methods, this process involves exposing as much of the alcohol as possible to air by circulating the vinegar through the different sections of a large tank. The greater the surface area between the air and the alcohol, the more bacteria can convert the alcohol into vinegar. This method allows the vinegar to retain more of the wine's flavors and aromas, while also imparting a smoother taste.
